Chef Scott Linquist of the popular New York and Vegas restaurant, Dos Caminos, has published his first cookbook, Mod Mex: Cooking Vibrant Fiesta Flavors at Home:

In addition to a diverse array of recipes and vibrant four-color photography, informative head notes and sidebars throughout the book offer tips on day-before preparation, recipe variations, cultural insights, cooking techniques, and more.
Linquist was recently out promoting his cookbook and made a stop over at the Today Show, cooking up some incredible Mexican breakfast foods. He shared different takes on pancakes (corn-blueberry pancakes), kicked-up huevos rancheros and French Toast. He used a brioche or you could use a sweet bread, a basic egg custard to soak the bread in for a few minutes, press crushed Rice Krispies all over it and place it on a buttered griddle. He placed a fresh berry syrup with cinnamon, whipped cream and powdered sugar. Sadly the recipes were not available on the Today Show website, just the video, but they are all in Linquist’s cookbook.
