New Year’s Day Brunch

Brunch seems to be a common party theme for New Year’s Day. I would say because a brunch menu tends to be simple, you can usually have it easy as a buffet style so people just eat when they want and let’s face it, many of us have been up late the night before and among other things are a bit on the tired side.
There are plenty of Brunch ideas out there. The Food Network has several menus as well as Epicurious, and Martha Stewart.
A lot of people like omelet bars, but the only down-side is that someone has to man the stove the entire time. I saw this idea from Paula Deen. You simply put your omelet together in a ziplock bag, put it in boiling water for a few minutes and you have an omelet. This would be any easy thing for guests. Now, I have no clue how it tastes, so you may want to experiment with one before you give it a try at a party.
Don’t forget the cocktail. A Mimosa or (what most people need) a Bloody Mary are great for a brunch.
Now, if you want something completely different check-out these recipes from Chef David Burke. The first is an Omlet Strudel. The recipe calls for Bric Dough, which is almost like an egg roll sheet, but you could use a crepe or tortilla.
The other recipe is something that was almost to incredible to watch, a Heath Bar Pancake…WOW:
Heath Bar Crunch pancakes with whipped cream

INGREDIENTS
• 2 1/4 cups buttermilk
• 1/4 cup melted unsalted butter
• 3 large eggs, separated
• 2 1/4 cups all-purpose flour
• 1/4 cup sugar
• 2 teaspoons baking powder
• 3/4 teaspoons baking powder
• 1/2 teaspoons salt
• 3 Heath Bars, crushed
Whipped cream
• 1 cup heavy cream
• 1 tablespoon chocolate sauce
• 1 tablespoon caramel sauce
DIRECTIONS
Preheat the oven to 200 degrees. Line a baking sheet with parchment paper. Set aside.
In a medium mixing bowl, beat together the buttermilk and melted butter. When they are well combined, whisk in the egg yolks. Set aside.
Combine the flour, sugar, baking powder, baking soda, and salt in another mixing bowl. Set aside.
Using an electric mixer, beat the egg whites until soft peaks form. Pour the buttermilk mixture into the dry ingredients and mix them together to just blend. Do not overbeat. Add in the crushed Heath Bar. Using a rubber spatula, gently fold in the egg whites to just incorporate.
Heat a nonstick griddle over medium heat. Spoon the batter, about ¼ cup at a time, onto the hot griddle to make neat circles. Cook it for about 3 minutes, or until the top is filled with bursting bubbles and the bottom is golden. Turn and cook the remaining side. Place the cooked pancakes on the prepared baking sheet and into the preheated oven to keep them warm while you continue making pancakes.
For the whipped cream:
Combine the three ingredients and whip to stiff peaks.
Serve hot, at least three per person.
