Summer Watermelon Situation

The heat has kicked into high gear here in Florida, as for much of the country.  I am planning another gathering at the Thompson Compound sometime next month and want a nice cool cocktail beyond our regular Margaritas.  I really like the Frozen Wine, but we need a cocktail that will go a little further.

On Food Network they have a lot of great ideas for Summer Cocktails 2007 including a few ideas from Summers 2005 and 2006.  Just take a look to the right of this Summer cocktail list for other ideas like the Tequila Fresca and the Dirty Banana.

I am leaning toward trying the Summer Watermelon Situation (pictured above):

Difficulty: Easy
Prep Time: 10 minutes
Inactive Prep Time: 30 minutes
Yield: 8 to 10 drinks

8 cups diced watermelon (about 1/2 of a small watermelon), plus slices for garnish
8 ounces lemon vodka, chilled
7 ounces simple syrup, recipe follows
1 (17.5-ounce) can coconut juice
1 lemon
Chill watermelon in the freezer for 30 minutes. Put all the ingredients in a blender and puree until smooth. Finish with a squeeze of fresh lemon. Serve very cold in a chilled glass, and garnish with watermelon or lemon slices.

Reserved.Simple Syrup:
1 cup sugar
1 cup water

Put the sugar and water in a small saucepan. Cook over low heat, stirring, until the sugar dissolves. (Alternatively, heat in the microwave.) Store in a sealed container in the refrigerator for up to 1 month.

Yield: about 1 1/2 cups
