Lee Anne Wong Cooks Seared Ostrich

 On the Bravo Website Lee Anne Wong cooks up the winning recipes from each episode.  The most recent winner, Tre, cooked Seared Ostrich Fillet with Heirloom Tomato Risotto and Abalone Reduction.  Lee Anne does a great job explaining the dish with a lot of great hints.

So, where do you get Ostrich meat anyway???  I checked the web and I found a grower in California.  Ostrich meat is really lean and not that expensive.  I thought it would be pricey, but it is currently between $6-7 a pound for ground and about $20 a pound for fillet.  With a little web research you could probably find a Ostrich Rancher in your area.

Abalone also is farmed.  Again, I found a farm in California.  Unlike ostrich, abalone is very expensive, but many chefs compare it to lobster or scallops.  I think that the substitution would be fine.
