Take Home Chef Fried Chicken

There has been a lot of people asking about Curtis Stone’s recipe for Southern Fried Chicken, Collard Greens and Chocolate Spearmint Martini (pictured above). The episode recently aired on Top Chef.
After a lot of web searching and daily checking of the show site, the Take Home Chef fan-site on TLC had not been updated…that is until today. I will try and contact all of you who asked, but the recipe has finally reached us and to get all the recipes mentioned above click here for the link.

I saw the episode you referenced. Although Curtis’s recipe for collards a looked delicious, it was a little different from how most southerners cook their greens. A typical way to cook collard greens is to boil them (a long time!)with some salt, maybe a little pepper, and season with fatty pork, sometimes called a ham hock (but any type of fatty pork is okay). A lot of people put vinegar on their greens as well.

yes, I think it is interesting sometimes watching non-southerners cook soutern staples.
