Baked Eggplant Parmesan

If you are looking for a tasty yet easy meal try Baked Eggplant Parmesan.  It comes from the kitchens of Everyday Foods.

It is just 10 ingredients, with most, probably staples in your kitchen pantry.  The hardest task is probably peeling and slicing two eggplants. 

Instead of frying the eggplant they have you bake it to save on the fat.  Due to that it does take a little more cook time.  The prep time is 20 minutes and the cook time is 1 hour 30 minutes.

    Growing up I ate baked eggplant at least 3-4 time per week. My grandmother always had a casserole of it in the fridge. We had it in our sandwiches or as a side dish. It was good hot, cold or room temperature.You can’t go wrong with baked eggplant.
