Baked Eggplant Parmesan

Growing up I ate baked eggplant at least 3-4 time per week. My grandmother always had a casserole of it in the fridge. We had it in our sandwiches or as a side dish. It was good hot, cold or room temperature.You can’t go wrong with baked eggplant.
