Take Home Chef Curtis Stone
Many of you are aware of TLC’s show, The Take Home Chef. Australian Chef Curtis Stone goes to different parts of the country and corners people in the supermarket. He then sees if they would want to take him home and he will create a surprise culinary feast for them and their family or whoever.
It is a fun show and surprisingly some people say “no”. I never quite got that. A good-looking, Australian chef wants to cook a great meal for me…hmmm…and I would say “no” because…….?
He has been on several daytime shows promoting his new cookbook, Cooking with Curtis. Most recently he was on Martha Stewart cooking Fried Stuffed Squash blossoms. I actually saw this particular episode. They looked great. If you don’t happen to have your own zucchini or squash blossoms, check to see if any local farmer markets carry them. You simply stuff them with a little cheese and a basil leaf, put them in a tempura batter, fry and wow.

The cookbook has received great reviews and the set-up is great. He has it separated into the four seasons. Brad Hooper from Booklist wrote:

I am thrilled I am not the only one that can’t find that southern fried chicken recipe. TLC’s recipe site is the worst, I can’t figure out how them list the shows or the recipes and there is no way to look it up by date or name.
I remember the order of the recipe: soak chicken in buttermilk and then dredge in seasoned flour (what are the seasonings?) then dip in egg and water whisked together(how much of each?) and dredge in flour again. Drop chicken into a pot of hot oil (how long? I think it was 7 minutes) then put in a metal collander then onto a plate in the oven on 225. Anybody remember the details I don’t remember or need to correct what I think I remember? Thanks

Now I may be very off base….but i hae never seen Curtis take home a guy from the grocery store to cook for his girlfriend/wife. My girlfreind and I love the show and Curtis’ cooking and i would love to see (or be) this said man to cook for the love of my life.
I hope that this is not a shameless way for Curtis to meet girls!! We don’t think so…So why not dudes/husbands?…..Not saying husbands can’t be dudes! lol

Curtis took home a whole fire department of men to cook for their famlies and I believe he did take a man home one time to cook for his wife.
But I agree it is usually all good looking women and thin women only!!!!

I watched the fried chicken episode. The only part that I don’t know is the spices, however up above it seemed that someone knows them. Curtis let the chicken soak in buttermilk for awhile. Then in one bowl he whisked eggs and in another was the flour and spice mixture. He then after probably half hour or hour of the chicken soaking, dip each piece first in the flour, then the egg, then the flour again. He then put the chicken into a large skillet with hot oil and let them cook in there for 15 minutes. They were golden brown and he put them in a strainer and then on a paper towel to absorb the oil. Then spaced out he put them into the heated oven for I think lkie 10 minutes or so to finish. The rest of his menu I have no idea, I just wish I knew the spices for sure…

I was starting to get frustrated as I too am looking for Curtis’ recipe for Southern Fried Chicken. Now as I read the comments it clearly is not yet on the site. Thank you to the comments before me I am going to try to wing it with the few suggestions but I too would also like to get a copy of this recipe.

I always watch take home chef every chance that i get and i also have curtis cookbook called cooking with curt. I hope one day i can get to meet him or cook with him he makes it look easy when he cooks and fun he is also cute. He has inspired me to cook and i might consider on being a chef.I havn’t been able to cook one of his recipe but im trying out my new recipe that i have come up with.

i just met him not more than 15 minutes ago. he is the nicest televsion star you will ever meet and just on that alone deserves all the fame and success in the world that he is destined to receive. he even put aside his own cell phone call to say hello to my girlfriend/fiance because i said we were such big fans and she was on MY phone at the time. kudos for him not letting your head swell like most other stars and i just wanna know that even though my lady is a great cook, when are ya gonna have a second kosher couple on the show C.S.????

I just met Curtis in RIO DE JANEIRO, Brazil. Best part, I live in Montreal, CA, watch his show whenever I can (they changed the schedule, and it’s quite early now). He is very nice and friendly, the same guy that you see on the show. I just hope that someday he makes to Montreal, or that I bump into him again here in Rio, and this time I will invite him to taste a traditional Brazilian meal at my parents!!

Agreed. The website leaves little to be desired…
Does anyone have the recipe for the cookies made with crunchy peanut butter and chocolate chunks? Show aired in January; cookies were featured with homemade hot dogs. This Greek Feast was a picnic for Seth and Kaye who love baseball.
The show was scheduled to reair in January but it and the recipes are now nowhere to be found.

I enjoy the show however I woukd like to see a little more ethnicity. Curtis tends to pick the same time of women.Men cook, Black women cook , Hispanic women cook and Asian woman cook lets see Curtis pick some of them.

How dare someone intimate that Curtis Stone might be gay. Where did that come from? I see him responding (subtley) to certain women that he has chemistry with. Just because he’s very busy, wants to travel light for a while and not deal with the load of resposibility that comes from a whiney woman (come on ladies, you know it’s true, we can be a pain) doesn’t mean he’s “gay”.

Southern-Style Fried Chicken
Serves 4
Ingredients:
3 teaspoons/about 15 g salt, divided
One 4-pound/1.8-kg whole chicken, backbone removed, chicken cut into 8 pieces, skinned (except for wings)
3 cups/700 ml buttermilk
1½ cups/200 g all purpose flour
2 tablespoons/30 ml dry mustard
1 tablespoon/about 6 g paprika
2 teaspoons/about 4 g garlic powder
1½ teaspoons/about 3 g onion powder
3/4 teaspoon/about 1.5 g freshly ground black pepper
3 large eggs
2 tablespoons/30 ml water
6 cups/1.4 liters grapeseed oil or canola oil, for frying
Collard Greens (see recipe - next page)
Method:
Massage 1½ teaspoons/about 8 g of salt into the chicken pieces. Combine the chicken pieces and buttermilk in a large bowl, and turn the chicken pieces to ensure they are completely coated with the buttermilk.
Cover with plastic and refrigerate for at least 2 hours and up to 1 day. Stir the flour, dry mustard, paprika, garlic powder, onion powder, remaining 1 1/2 teaspoons/about 8 g of salt, and pepper in a medium shallow bowl to blend. Transfer the flour mixture to a baking sheet.
Whisk the eggs and water in the same medium shallow bowl to blend. Preheat the oven to 300°F/150°C. Place a large wok over medium to high heat. Once the wok is hot, add the oil.
Lay the chicken pieces on paper towels to absorb some of the excess moisture, but being careful not to wipe too much of the excess buttermilk off of the chicken pieces. Discard the buttermilk in the bowl.
Carefully dredge each chicken piece in the flour mixture to coat completely. Dredge the flour-coated chicken pieces in the egg wash and then in the flour mixture again to coat completely.
Working in 3 batches, carefully place the coated chicken pieces into the hot oil and cook for 6 minutes on each side or until they are golden brown and almost cooked through.
Using tongs, transfer the chicken pieces to a colander to drain any excess oil. Then place the chicken pieces on paper towels to absorb any remaining excess oil.
Place all the chicken pieces on a heavy baking sheet and bake for 15 minutes or until the chicken pieces are cooked through but still moist and juicy.
Serve with the collard greens and enjoy!

I know this sounds so sad.. but ive never been able to make anything in the kitchen.. well thats not true.. i make a mean spanikopita. But when making big meals.. i cant seem to get it out on the tbl all at the same time.. and for godsake.. im 28 years old and i should be good at this by now!!
But At last…. i printed out the beef wellington w/green beans and did it.. but i couldnt believe how easy the recipe was to follow.. plus it told me when to start the green beans.. and god knows i need help with the beans.. :)

Well, they certainly weren’t on his site and as luck would have it, I found the cookie recipe on someone’s blog.
It’s not always as easy as 1-2-3.
The cookie recipe is AMAZING!!!

If you are like me and couldn’t find Curtis Stone’s recipe for Chocolate Peanut Butter Cookies - here it is!
Cheers!!!
Chocolate Peanut Butter Cookies
1 tsp. baking soda
1 cup of brown sugar
1 stick of butter
1 egg
1 cup of peanut butter (he used chunky, but creamy works well)
1/4 cup of honey
1 1/2 cup of all purpose flour
1 bar of dark chocolate (about 1-2 cups of broken chocolate pieces)
Mix the baking soda, brown sugar, and butter together.
Add the egg.
Add peanut butter and honey.
Add flour and chocolate and fold the wet and dry ingredients together.
Roll into small/medium sized dough balls, 6 to a tray.
Bake at 350 for 12-15 minutes.
Makes approximately 28 cookies
P.S. It would be brilliant if Curtis Stone came to Canada and produced some shows here.

In regards to Lauras peanut Butter cookie recipe what is the proper amount of butter .In the recipe it refers to a stick of butter is that 1/4 cup or a 1/2 cup of butter! Please define the amount?

About the everyone asking for recipes. My best suggestion is Keep looking and good luck. The site at TLC is pretty lousy and doesn’t update regualry. You have to just keep looking, or make sure that you have a pad and paper handy to try your best at jotting down the recipe.

I have been searching for the peach cobbler recipe. (It was on the episode with the brisket.) I eventually wrote the TLC headquarters, but they did not respond. If that recipe is in his cook book please let me know so that I can purchase it. Why do they bother listing the website at the end of the show if the recipes are not there?

I love Curtis! I watch him for an hour a day for goodness sake. However I would love for him to surprise my best friend in Prescott, AZ. She is so lovely and needs a break for just one night. I just finished watching a re-run on Curtis cooking the sword fish over panfried okra. The dessert is what I am after. It is a chocolate and creme brulee mouse (parfait).? I have looked on every recipe page and cannot find it.

I have enjoyed Curtis immensley. He is not only a great chef with beautiful tasting and appealing recipes, but his show has the charissma of his ‘Own’ kind of magic. I waited with baited breath for the new season, and saw actually only five new episodes. Noticed the beginning on the five new had been changed up. Mostly still reruns from last year. What has happened to the Greatest Chef on television? What has happened to his show?
It is a winner because of it unique format and the man behind the apron!!!!!!!!One of TLC’S Best shows! Five Star All Of The Way!

Curtis I would like if you could come to pineville lousiana.I would also like for to come into my and cook a wonderful meal for husband.He is the soul provider for our family and told me I didn’t have to work so I could take care of our daughter who is now 5 years old.I always have a hard time find something to cook b/c he and our daughter are on the picky side and no-one will eat the same as the other. Sometimes i’m cooking 3 different meals at dinner time.PLEASE HELP ME AND MY HUSBAND IS VERY DESERVING OF THIS SUPRISE.

I would like to nominate my mom for her 60th b-day to have Curtis prepare a meal for her. She loves the show and creates up ideas of things to cook just by opening the refrigerator door. I saw the re run of the Brisket show… May 30th I think. I almost had the recipe down and I couldn’t finish it because I was called out to do some errands… GRRR! I did manage to write down what was in it, but not all of the amounts… Sorry :-( . Here it is…
BBQ Brisket
Dry Rub -
1 tsp chili pepper
3-4 tsp paprika
1 ? sugar
? black pepper
? onion, chopped finely
? thyme leaves
? garlic
? salt
Rub into brisket and cover to sit in fridge for 1 hr.
BBQ Sauce -
in a sauce pan…
? Dry oregano
? Chili pepper
? Ground Spice
? Black pepper
1 tsp Sugar
? Salt
5-6 TBSP bourbon
2 TBSP Worchestershire Sauce
1/2 jar ketchup
4-5 lemons, juiced
? pineapple juice
? Pureed overripe peaches

Hey everyone. In regards to the recipes from the show…the best bet is to do what Tracy S. did and while you watch the show be prepared to write down what he offers up in the recipe. The website to the show is notorious for not updating the recipes. Just keep checking their show site, but I have seen recipes take three months to reach the site. Good luck.

My daughter and I love to watch your show. She is a full time student, works at our local hospital and got married a year ago November and now has a 6 month son named JT. She and her husband and son are living with me and my husband. She would love for you to come and cook for us if you are ever near the Pittsburgh PA area. We do not have the major grocery stores that we normally see you frequent and none of the kitchen stores you go to, but it would be such a treat for her if you could ever make it. Her and her school friends all talk about calling each other if you would ever “tap” them on the shoulder to go home with them. G’Day Curtis…I want you to know I am still waiting for you to show up in the Cleveland, Ohio area and cook a fantastic meal for me and my family. We watch you on the TLC Channel whenever we can. and I just love your charm and charisma. I ran into the Sou Chef of the Ritz Carlton Hotel while shopping in our local food market here in Cleveland (started in the early 1800’s) and asked him why he didn’t do the same conceptual idea as you do. He said that the hotel did cook gourmet meals for as many people as you liked, but you had to pay for it and it would have to be held at the Ritz. I said it wasn’t the same as having him come to my home and cook the meal for me. He just laughed and shrugged it off. So…Please come to the Cleveland area, possibly the Parma Hts area for me, possibly at the Heinens Fine Foods or The West Side Market (but you would be mobbed at the market so scratch that idea). Also I will be working the Fabulous Food Show November 16th at the I-X Center in The Main Kitchen Theater and you are on the list of Famous Chefs who be exhibiting their talents. Along with Guy Fieri (Diners, Driv-Ins and Dives), our own local Iron Chef Michael Symon, and Paula and Bobby Dean. I look forward to meeting y’all after the show and I would greatly appreciate it if you could e-mail me back at Jazedup1950@yahoo.com with the days you will be appearing because I will be spending the whole day there on either Friday or Saturday. I remember Paula’s cameramen were fellow Aussie’s so you will feel right at home here even though we’re not quite “Down Under”.

The next time you are in the Washington, D.C. area. I would love for you to come and cook for my husband and I. My husband has sacrificed alot for me during our marriage. He turned down a position in Dallas and moved us to the D.C. area a few years ago so I could be near my dad who was ill with cancer. He has traveled alot and worked over time so we could pay for me to go back and get my Master’s degree. Recently for me to continue to get me degree he let me quit my job of 3 1/2 yrs so I could go back fulltime and stay home with our 2 children and 4 pugs. My husband is a wonderful person inside and out but I would like for him to realize how special he is for us. We rarely are able to found time to have a date night because of the kids. So I hope if you read this that you would consider us.

I would love to cook on your show with you. I admire you so much as a chef. I put you on my portfolio in school too. I had to write a few paragraphs about why i admired you as a chef. I wrote about how you started cooking and where you started. I admire you as a chef because you can make a gourme meal simply so other people can understand what you are doing. I got an A+ on for my grade. If i were to cook for anyone it would be my dad or my grandfather.

Yes, I turned on TLC today, the 8th day of September, and Curtis was back. Yes, it was a rerun, but nevertheless, he is back. I hope this is a good sign and that it means there will be more new shows eventually from him on the horizon…2 years is not a very long run, and he is just so gifted!

Never seen one kitchen out of order so they obviously clean up some kitchens before shouting, other then the recipes a very phony show.

Gotta say, his recipes seems so easy and well-prepared, I actually consider trying to do one of them. Also his instructions are not as complicated and his ingredients are well known that they seem so easy to make.
