Corned Beef Leftovers:  The Reuben

 So, if you had the Corned Beef and Cabbage this St. Patrick’s Day, what do you do with the leftovers?

One great idea is the Reuben sandwich.

Reubens are great grilled sandwiches with Corned Beef, sauerkraut, 1000 Island Dressing or Russian Dressing and Swiss Cheese.  There are several variations, including “The Rachel” which is made with pastrami instead of corned beef and sometimes with coleslaw instead of  sauerkraut. 

There is a great debate on how the Reuben was invented.  Either by Arnold Reuben in 1914 when an actress came into his 58th street NYC restaurant and asked him to whip her up something to eat; or it was created by a Omaha, Nebraska grocer, Reuben Kulakofsky for his poker buddies in 1920.
