French Culinary Institute to Offer Magic Potions Curriculum

The French Culinary Institute in Manhattan has started to offer a new class Magic Potions: Hydrocolloids. What are hydrocolloids?? Do you remember all the funky things Marcel, the finalist from Season 2 of Top Chef, enjoyed using? Those are hydrocolloids. They include Xanthan, carrageen, alginate, gellan, pectin and many more.
As a result taking Magic Potions: Hydrocolloids you will get an understanding of: Uses of hydrocolloids in the modern kitchen, types of hydrocolloids that are available and how they are derived, different textures and flavor release profiles of different hydrocolloid systems and the importance of salts, sugars and other ingredients on hydrocolloids; hydrocolloid synergy.
Classes are offered with a choice of two sessions. You can choose from a three day evening course March 26-28, 2207 or a weekend course September 22-23, 2007. The cost is $1,295.
