Erin McKenna Gives Some Chef Tips

Erin McKenna from Babycakes NYC shared a few baking tips on Martha Stewart.
For those who are avoiding refined sugars and dairy there are some simple substitutions.
1. When it calls for milk, substitute equal parts rice or soy milk. So, if the recipe calls for 1 cup milk, substitute 1 cup soy or rice milk.
2. For each egg in a recipe, substitute 3 tablespoons applesauce. So, if the recipe calls for 2 eggs, substitute 6 tablespoons applesauce.
3. For each cup of sugar substitute 2/3 cup Agave Nectar.
Agave Nectar will probably be available at your local health food store or go on-line at Amazon.

This is not the website for Erin Mckenna, but as of this email she has no cookbooks, just a shop.
My best advice is to hit the web and just google “gluten free recipes” Here are some websites where I found some recipes and information:
http://allrecipes.com/Recipes/Healthy-Living/Gluten-Free/Main.aspx
and
http://www.recipezaar.com/recipes/gluten-free
and
http://www.kidswithfoodallergies.org/?gclid=COSGno216ZACFQUllgodIXM5WQ
and
http://www.withoutthewheat.com/
You may have to experiment with the recipes some, but that can be part of the fun.
Good Luck
