Thanksgiving Day Preparations

A lot of your Thanksgiving Day preparations can start a few days before the big day.
Currently, it is the night before Thanksgiving, and all my well-intended planning has gone out the window. But it is not too late to get some of my prep done the night before.
Before the day there are a couple of things you should definitely do. One is check that you have all the necessary serving platters, serving utensils, plates, cups, etc. Don’t just assume that you do. Take it all out and decide what dish is going in what and that you have everything that is necessary to serve and eat your labor of love. Take care of it by tonight, that way, if you forgot something, you can either borrow what you need or run down to your 24-hour Walmart (a journey you usually despise) and get what you forgot.
Also, go through all your recipes and double-check that you haven’t forgotten anything. Prep your sides, glazes, etc… Stuff like cranberry dressing tastes better if it has been prepped at least a couple of days ahead. It gives all the flavors a chance to marry. Martha Stewart has a great list of preparations. Many that could have been done much sooner, but it is not too late. For example, potatoes can be peeled, cut and kept in a pot of cold water in the refrigerator until tomorrow. It is also a good idea to cut up your bread for your stuffing and leave it out on a baking sheet overnight to help dry out the bread. If it is dry enough in the morning or you can’t do it tonight, dry it out in a low heat oven for a few minutes. Just keep a sharp eye on it so you don’t burn it!
