Chicken Soup for the Sick
I’ve been under the weather lately (way under), so I thought I’d check to see what chicken soup recipes are available on FoodTV. After doing a quick search, of course, a load of them showed up. However, this one, Thia Chicken Soup from Jamie Oliver sounds the yummiest to me because of its Asain influence. Here is the ingredients list, which even with this cold got my mouth drooping:
1 (4 pound/2 kilogram) free range or organic chicken
7 ounces (200 grams) tamarind*, broken up
1 piece ginger, sliced
2 red chiles, seeds removed, 1 chopped and 1 finely sliced
1 red onion, skin on, sliced
2 sticks lemongrass, bashed, bruised and roughly chopped
1 bulb garlic, cut in 1/2
1 large bunch fresh coriander
1 (400 ml) can coconut milk
8 ounces (225 grams) rice noodles
Thai Fish Sauce*
Soy sauce
Drizzle olive oil
This recipe came from his Oliver’s Twist show, which I rarely see any more on the network. Too bad.
